These pancakes are fluffy on the inside and have a clean exterior; thanks to the addition of cottage cheese, they have more protein than most. Source: Martha Stewart Living, December 2004. The recipe makes 2 dozen pancakes. Ingredients: 6 large eggs, separated, yolks lightly beaten, 2 cups 2% cottage cheese, 1/4 cup granulated sugar, 2/3 cup all-purpose flour, 1/2 teaspoon baking powder, 1/4 teaspoon coarse salt, 1/4 teaspoon cinnamon, vegetable cooking spray, confectioners sugar for dusting, 2 lemons (1 zested, 1 cut into wedges). Instructions: 1. Beat egg whites at medium-high speed until they hold stiff, glossy peaks. Fold in cottage cheese; beat until just combined. 2. Preheat oven to 200 degrees. In a medium bowl, whisk together egg yolks, cottage cheese, granulated sugar, flour, baking powder, salt, and cinnamon until well combined. Beat in one-third of the egg whites. In two batches, gently fold in remaining egg whites with a rubber spatula. 3. Heat a large nonstick skillet over medium heat. Coat with cooking spray. Working in batches, ladle 1/4 cup batter per pancake into skillet. Cook until surfaces are bubbly and edges are dry, about 1 minute. Flip pancakes; cook until undersides are golden brown, about 3 minutes more. Dust with confectioners sugar and lemon zest. Serve with lemon wedges. Chefs Notes: Once you make the batter, cook the pancakes immediately to ensure they retain their volume.
