This delicious recipe for artichoke is from the kind assistance of Mark Bittman and can be found in his cookbook “How to Cook Everything Vegetarian”. Source: The Martha Stewart Show, May 2008. 4 servings. Ingredients: 2 lemons, 8 baby artichokes, trimmed, Parmesan cheese, 3 tablespoons extra-virgin olive oil, coarse salt and freshly ground black pepper, chopped fresh flat-leaf parsley or fresh basil leaves, for garnish. Instructions: 1. Squeeze the juice of 1 lemon into a large bowl of ice water. Separate the hearts and bottoms of the artichokes, if thin enough, as thinly as possible, adding them to the ice water as you go. 2. Thinly slice the Parmesan so you have about as many cheese slices as you do artichoke slices. Zest and juice the remaining lemons; set aside. 3. Remove the artichoke slices from the water and pat dry. Toss with the olive oil and reserved lemon juice; season with salt and black pepper. Layer the artichoke slices on a platter with the Parmesan; season with salt and black pepper. Garnish with reserved lemon zest and herbs; serve immediately.
