These pies, filled with minced lamb and potato nut, are a comforting heart food for the autumn season. The recipe is from Daily Food, October 2004. This dish takes 1 hour and 10 minutes to prepare, serves 8, and requires the following ingredients: 2 pounds of fresh minced lamb, 1 large onion finely chopped, 4 roughly chopped carrots, 2 tablespoons of tomato puree, 2 tablespoons of flour, 1 to 2 tablespoons of Worcestershire sauce, coarse salt and ground pepper, 10 grams of thawed frozen peas, 2 1/2 pounds of peeled and chopped rusty potatoes, 1 cup of milk, and 6 tablespoons of butter. The instructions are as follows: preheat the oven to 425 degrees, cook the lamb in a large pan until pink, transfer to a bowl, add water to the pan, reduce heat, add onion and carrots, cook until soft, add tomato paste and flour, cook for 2 minutes, add Worcestershire sauce, 2 cups of water, lamb, salt, and pepper, cook for 10 minutes, add peas, divide between 8 ramekins or 2 pie dishes, cover with mashed potatoes, bake for 25-30 minutes. This recipe makes 8 individual servings or 2 large pies. The pies can be frozen for up to 3 months and reheated in the oven at 375 degrees for about an hour.
