These irresistible chocolates are a wonderful gift to serve to guests. The recipe, featured on The Martha Stewart Show in December 2009, calls for heavy cream, egg yolks, sugar, light corn syrup, water, hazelnut praline paste, melted dark chocolate, vanilla extract, salt, and blanched, toasted hazelnuts and shaved dark chocolate for decoration. The mousse is made by whipping the cream, beating the egg yolks with the hot sugar syrup and hazelnut paste, and folding in the melted chocolate. The mousse is then piped into chocolate cups and garnished with hazelnuts and shaved chocolate. Note that raw eggs should not be used in food prepared for pregnant women, babies, young children, or anyone with compromised health.
