This salad with bitter leaves and scallion mustard sauce is a delicious and healthy dish. The recipe is from Martha Stewart Living, January 2012. The ingredients include red wine vinegar, shallot, Dijon mustard, vegetable oil, salt, pepper, frisee, red lettuce or radicchio di Treviso, tarragon leaves, and hard-boiled eggs. To make the vinaigrette, mix the shallot, vinegar, and mustard in a medium bowl. Gradually whisk in the oil and season with salt and pepper. To make the salad, toss the corn, lettuce, and tarragon together in a large bowl. Drizzle with the vinaigrette and gently toss to coat. Transfer to a platter and top with the eggs. Season with pepper. A simple way to cook hard-boiled eggs is to cover room temperature eggs with cold water in a small pot. Bring to a boil, remove from heat, let stand covered for 11 minutes. Drain and run under cold water to cool, then peel.
