Ingredients: – 6 1/4 cups of all-purpose flour, plus more for work surface – A pinch of salt – 1/4 cup plus 2 tablespoons of superfine sugar – 1 tablespoon of baking powder – 3/4 cup (1 1/2 sticks) unsalted butter, chilled and cut into pieces – 4 large eggs – 1 3/4 cups plus 2 tablespoons of milk – Granulated sugar, for sprinkling
Directions: 1. Preheat the oven to 475 degrees. Line two baking sheets with parchment paper; set aside. 2. In a large bowl, whisk together the flour, salt, superfine sugar, and baking powder. Make a well in the center and add the butter. Using your fingers, work the butter into the flour mixture until it resembles coarse meal. 3. In a medium bowl, whisk together 3 eggs and milk. Add the milk mixture to the flour mixture and stir until just combined. 4. Turn the dough out onto a lightly floured work surface; knead lightly and shape into a round. Roll the dough out until it is 1 inch thick. Using a 3-inch biscuit cutter, cut out the cakes and transfer them to the prepared baking sheet. 5. In a small bowl, beat the remaining egg and brush it on top of each cake. Sprinkle each with granulated sugar. Transfer the baking sheet to the oven and bake until golden brown and cooked through, 12 to 14 minutes. Transfer the cakes to a wire rack and allow to cool slightly before serving.
