These quickly pickled carrots are used to make delicious Indian spices. The recipe yields about 2 cups and includes white wine vinegar, sugar, coarse salt, julienned carrots, and fresh ginger. To make, whisk together the vinegar, sugar, and salt in a medium bowl. Add the carrots and ginger, toss to combine, cover, and refrigerate for at least 2 hours or overnight. This recipe was featured on the Martha Stewart Show in the fall of 2008.
