These thin chocolate cookies with ganache frosting, dipped in coconut flakes, make the perfect nests for two or three miniature chocolate eggs. This recipe from Martha Stewart Living, April 1999, yields 2 dozen cookies. To make them, youll need unsalted butter, sugar, all-purpose flour, salt, Dutch-process cocoa powder, semi-sweet chocolate, cream, instant espresso powder, gel-paste food coloring, sweetened coconut flakes, and candy-coated chocolate eggs. The cookies are easy to make: mix butter and sugar, then add flour mixture and mix until a stiff dough forms. Chill the dough, then roll it out and cut out cookies. Chill again, then bake until firm. For the colored coconut, mix food coloring with water and stir in coconut flakes. Bake until dry, then cool and transfer to a bowl. For the ganache, melt chocolate, cream, and espresso powder, then let cool. Pipe ganache onto cookies and dip in coconut flakes. Fill with candy-coated chocolate eggs. Enjoy!
