These shortbread cookies with added almonds give them an unexpected but welcome crunch. The recipe is from Martha Stewart Living, December 2002 and makes about 3 dozen cookies. To make them, youll need flour, cornstarch, white pepper, ground cardamom, salt, unsalted butter, confectioners sugar, almond extract, egg white, and blanched almonds. First, preheat the oven to 325 degrees and mix together the dry ingredients. In a separate bowl, cream the butter and sugar, then add the almond extract. Gradually add the dry ingredients until a dough forms. Chill the dough, then roll into balls and press two almonds onto each one. Bake for 18 minutes, then roll in sugar and let cool. These cookies can be stored in an airtight container at room temperature for up to a week.
