This side dish of green beans with a crispy coating goes well with roasted chicken, meat or fish. Source: Everyday Food, March 2011. 4 servings. Ingredients: 1 cup fresh breadcrumbs (from 2 slices of bread), 3 tablespoons extra-virgin olive oil, 1/4 teaspoon cayenne pepper, a pinch of crushed red pepper flakes, coarse salt and freshly ground pepper, 1 pound green beans, trimmed. Instructions: 1. Preheat the oven to 350 degrees. On a small baking sheet lined with parchment paper, toss together the breadcrumbs, 2 tablespoons of the olive oil, the cayenne pepper, and the red pepper flakes. Season with salt and black pepper. Bake until golden and crisp, 5 to 7 minutes. Meanwhile, set a steamer basket in a pot with 1 inch of simmering water. Add the green beans, cover, and steam until tender and bright green, 3 minutes. In a medium bowl, toss the beans with the remaining tablespoon of olive oil. Season with salt and black pepper and top with the breadcrumbs.
