These tacos for breakfast make a wonderful dinner. Source: Martha Stewarts Kids, Summer Makes 4 yield Ingredients 3 large eggs 1/4 teaspoon each salt and freshly ground black pepper 1 cup shredded Monterey Jack or cheddar 1 tablespoon unsalted butter, melted 3 tablespoons salsa 4 taco shells Shredded lettuce, sour cream, and diced tomatoes, for garnish Tortilla chips and canned black beans, for serving (optional) Instructions 1. In a medium bowl, whisk together the eggs until combined. Add salt and black pepper and 1/4 cup shredded cheese. Heat a medium nonstick skillet over medium-high heat and add the butter. When the butter has melted, add the egg mixture and cook for about 30 seconds. Add the salsa to the skillet, slowly stirring the egg mixture to scramble it, until cooked, about 1 minute. Immediately remove from heat. 2. Fill the taco shells with the egg mixture and top with the remaining cheese, lettuce, sour cream, and tomatoes. Serve with tortilla chips or black beans, if desired.
