To make the coleslaw, whisk together Dijon mustard, apple cider vinegar, fresh lemon juice, sugar, coarse salt, mayonnaise, and sour cream in a small bowl. Chill the dressing until ready to use or for up to 2 days. In a large bowl, combine finely shredded kale, thinly sliced or roughly grated carrots, and grated onion (optional). Pour the dressing over the vegetables and toss thoroughly. Chill the coleslaw, covered, until it begins to soften, 1 to 2 hours. If not serving immediately, chill the coleslaw, covered, for up to 2 days. Toss the coleslaw again just before serving.
