This heart-healthy soup is wonderful throughout the winter. Source: Martha Stewart Living, October 1994. The recipe includes ingredients such as unsalted butter, onion, garlic, carrots, French green lentils, bay leaves, canned tomatoes, salt, black pepper, Italian bread, escarole, and extra virgin olive oil. The instructions are to melt the butter, add the onion, garlic, and carrots, then add the lentils, bay leaves, tomatoes, salt, black pepper, and water. Let it simmer for 40 minutes until the lentils are tender. Meanwhile, toast the bread cubes in the oven and add escarole to the soup for the last 5 minutes of cooking. Serve the soup with the croutons and olive oil. If you cant find French green lentils, substitute brown lentils.
