This sophisticated ice cream both soothes and awakens the taste buds with fresh and sugared ginger. Source: Martha Stewart Living, July/August 1996. Makes 1 quart. Ingredients: 1 cup milk, 3 cups heavy cream, 1 cup sugar, 1 tbsp freshly grated ginger, a pinch of salt, 6 large egg yolks, 1/3 cup finely chopped sugared ginger, plus more for garnish, 1 tsp pure vanilla extract, 1/2 tsp fresh lemon juice. Instructions: 1. Heat milk, cream, 1/2 cup sugar, fresh ginger, and salt over medium heat until lightly boiling; remove from heat. 2. In a medium bowl, beat egg yolks and remaining 1/2 cup sugar with an electric mixer fitted with a whisk attachment until thick and pale, 3-5 minutes. 3. Gradually whisk half of the hot milk mixture into the egg yolk mixture; pour back into the saucepan. Cook over medium-low heat, stirring constantly with a wooden spoon, until the mixture coats the back of the spoon, 3-4 minutes. 4. Remove from heat, pour into a bowl, and set in an ice-water bath, stirring occasionally. Stir in sugared ginger, vanilla, and lemon juice. Freeze in an ice cream maker according to the manufacturers instructions. Serve with additional sugared ginger, if desired.
