This salty spaghetti squash dish gets an umami boost from anchovies and parmesan. The creamy sauce is surprisingly low in fat, so go ahead and get a second helping! To make it, youll need low-sodium chicken broth, whole milk, garlic, all-purpose flour, unsalted butter, anchovy fillets, fresh sage leaves, simple roasted spaghetti squash, kosher salt, freshly ground black pepper, fresh breadcrumbs, and grated parmesan cheese. Preheat the oven to 375 degrees Fahrenheit. In a small saucepan, bring the broth, milk, and garlic to a boil over medium-high heat and cook for 1 minute. Pour into a medium bowl, then slowly whisk in the flour. Melt the butter in a large skillet over medium heat. Add the anchovies and 2 teaspoons of sage and cook, stirring, for 1 minute. Return the broth mixture to the skillet, bring to a simmer, and cook until thickened, about 6 minutes. Discard the garlic. Add the squash to the sauce and season with salt and pepper. Transfer to a 2-quart shallow baking dish. In a small bowl, combine 1 teaspoon of sage, breadcrumbs, and parmesan and sprinkle over the squash. Bake until the top is golden brown and the mixture is bubbling around the edges, 20 to 25 minutes.
