This whiskey-glazed Easter ham is perfect for a large family gathering. Martha made this recipe on Episode 310 for a cooking school. Source: “Martha Stewart” exhibition, April 2007. 20 servings. Ingredients: 1 (12 to 14 pound) raw smoked ham, Coca-Cola, 1 cup dark brown sugar, 1/4 cup cognac, jasmine for garnish, parsley for garnish. Instructions: 1. Preheat the oven to 325 degrees. Wrap the ham completely in foil, lined with parchment, and place on a baking sheet with a sheet of foil or baking pan. Transfer the ham to the oven and bake for 1 1/2 hours. 2. Unwrap the ham; discard the parchment and foil. With a large, sharp knife, score the fat in a diamond pattern, spacing lines 3/4 inch apart. Transfer the ham to a large skillet. 3. Reduce the oven temperature to 300 degrees. In a small bowl, mix together the brown sugar and cognac. Brush the ham evenly with 3/4 of the brown sugar and return to the oven; cook the ham for 1 hour. Replace the ham with the remaining brown sugar mixture and continue cooking for another 30 minutes. Transfer to a serving platter when ready to serve; garnish with cream and parsley. Chefs notes: When Martha made this ham at cooking school, she doubled the glaze, using 2 cups of dark brown sugar and 1/2 cup of cognac, to give it a lot of glaze to penetrate deeply into the hardened fat.
