This classic ham sandwich from France is drizzled with béchamel sauce and topped with fried eggs. Makes 2 sandwiches. Ingredients: 5 tbsp unsalted butter, 1 tbsp flour, 1 cup milk, 1/4 tsp salt, freshly grated nutmeg, 1 cup grated Gruyere cheese, 4 slices white bread, 2 tsp Dijon mustard, 3 oz thinly sliced high-quality ham, 2 large eggs, paprika to taste. Instructions: 1. Preheat broiler to high. In a small saucepan, melt 2 tbsp butter over high heat. Whisk in flour and cook until lightly golden. Add milk and salt and whisk constantly until mixture thickens, about 2 minutes. Remove from heat. Stir in nutmeg and half of cheese. 2. Lay bread slices on a baking sheet. Divide Dijon between two slices and layer ham on top. Divide half of béchamel between remaining 2 bread slices and top with remaining cheese. Close sandwiches. 3. Melt 2 tbsp butter in a large skillet over medium heat. Add sandwiches and cook on both sides until bread is golden brown and cheese is melted, about 3-4 minutes. 4. Return sandwiches to baking sheet, top with remaining béchamel and broil until bubbly, about 2 minutes. Meanwhile, melt remaining butter in same skillet over high heat. Fry eggs, sunny-side up, for about 2 minutes. Top sandwiches with fried egg, season with black pepper, and serve immediately.
