This grilled fish based on protein is delicious on its own or with an apple salad made from apple wheat. The recipe comes from the Martha Stewart Show in March 2010 and serves 4. The ingredients include 4 (6 to 8 ounce) Arctic fish fillets, sea salt, freshly ground pepper, 1 tablespoon olive oil, Maldon sea salt, and 1 lemon, sliced into wedges for serving. To prepare, preheat a grill pan over medium heat, use a sharp knife to create two vertical slits through the skin of the fish fillets, being careful not to cut the meat. Season with sea salt and pepper. Place the fillets on the grill, skin side down, and grill until the skin is crispy and the fish is almost cooked, about 3 minutes. Carefully flip the fish and continue grilling until fully cooked, 1 1/2 to 2 minutes. Sprinkle with Maldon sea salt and serve immediately with lemon wedges.
