These classic molasses cookies are allergy-friendly: they are free of dairy and eggs. The recipe comes from “Moms Food Allergy” by Kelly Rudnicki. Source: The Martha Stewart Show, Episode 7055. Makes 2 dozen.
Ingredients:
– 3/4 cup dairy-free margarine
– 1 cup packed light brown sugar
– 1/4 cup unsweetened applesauce
– 1/4 cup molasses
– 2 1/2 cups whole wheat flour
– 2 tbsp baking soda
– 1 tsp ground cinnamon
– 1 tsp ground ginger
– 1/4 tsp ground cloves
– 1/8 tsp salt
– 1/2 cup granulated sugar, for coating
Instructions:
1. In the bowl of an electric mixer fitted with the paddle attachment, combine margarine, brown sugar, applesauce, and molasses until well combined.
2. In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt. Slowly add the flour mixture to the margarine mixture; mix until well combined. Transfer the dough to the refrigerator and chill for 1 hour.
3. Preheat the oven to 375 degrees. Line a baking sheet with parchment paper; set aside.
4. Using your hands, shape the dough into 1-inch balls. Place granulated sugar in a shallow dish; roll each ball in the sugar. Place on the prepared baking sheet and sprinkle a few drops of water on each ball.
5. Transfer the baking sheet to the oven and bake until lightly browned, 12 to 14 minutes. Allow the cookies to cool completely on the baking sheet before serving.
