Ingredients: 4 boneless, skinless salmon fillets (3-4 ounces each), olive oil, coarse salt and freshly ground pepper, 4 fig leaves, 1/2 kilogram kale, torn into small pieces. Instructions: 1. Preheat oven to 350 degrees. 2. Brush salmon with olive oil and season with salt and black pepper. Wrap each piece of salmon in a fig leaf and place on a baking sheet. Transfer to oven and bake until cooked through, 10 to 12 minutes. Set aside and keep warm. 3. Place kale in a bowl and spray with olive oil; season with salt and black pepper. Place on baking sheets and transfer to oven. Bake until crispy, about 8 minutes. Divide kale evenly among 4 plates. Flake salmon and serve immediately on fig leaves with kale.
