This recipe for creamy black pudding mousse is well balanced with the accompanying tart, fresh bread; choose one or many. Source: Martha Stewart Living, September 2015. 1 hour and 30 minutes 30 min 6 Total time Prep Doses Ingredients 5 tablespoons unsalted butter, room temperature 1/2 red onion, ground (1/2 cup) 2 tablespoons ground garlic 1 teaspoon ground fresh garden tea ½ chicken black pudding, rinsed and cut Coarse salt and freshly ground pepper 1/4 cup Marsala 2 tablespoons heavy cream 1/4 cup Raspberry Jelly Simplified Crostini, for serving Assorted pickles for serving instructions 1. Melt 2 tablespoons butter in a pan over medium-high heat until ash. Add onion, garlic and garden tea; cook until softened, about 2 minutes. Add chicken black pudding, 3/4 teaspoon salt and 1/4 teaspoon pepper; cook, stirring occasionally, until browned, 4 to 6 minutes. Add Marsala and boil it; cook for 30 seconds, then reduce the heat to medium and bathe, covered, until the black pudding is just cooked, about 3 minutes. 2. Transfer the black pudding with juices from the pan, leaving 3 tablespoons butter and cream in a food processor. Puree until silky, about 2 minutes. Pass the mousse through a sieve to remove any lumps. Season with salt and black pepper. Transfer to a 1 1/2-cup frame or bowl and chill for at least 1 hour and up to 2 days. 3. Remove the mousse from the refrigerator 15 minutes before serving. Just before serving, spoon it on top. Serve with crostini and pickles.
