This gelatin dessert recipe is easy to make and has a beautiful light finish after a good meal. The source is Everyday Food, December 2006. Total time: 3 hours 15 minutes. Prep time: 15 minutes. Serves 6. Ingredients: 4 packets (1/4 ounce each) unflavored gelatin, 1/2 cup sugar, 2 cups pomegranate juice, 2 cups white grape juice. Directions: 1. In a small bowl, sprinkle gelatin over 1 cup cold water. Let soften, 5 minutes. Place over low heat, cook until gelatin dissolves, 3 to 4 minutes. (When rubbed between fingers, it should feel smooth.) Add sugar, stir gently until dissolved, 2 to 3 minutes. Remove from heat. 2. Transfer gelatin mixture to a medium bowl. Gradually stir in juices. Pour into a 1/2-quart (6-cup) mold, skim any foam from surface. Chill until set, at least 3 hours and up to 1 day. 3. To unmold, dip bottom (do not submerge) briefly in hot water; invert onto serving plate, then shake firmly to release. Serve.
