This recipe for light potato salad is perfect for a picnic – or try it with grilled sirloin steak slices with toppings. The source: Everyday Food, July/August 2008. The total time is 35 minutes, preparation time is 5 minutes, and it serves 8. The ingredients include coarse salt and ground pepper, 4 pounds of Yukon gold or other waxy potatoes, washed, halved, and sliced 1/2 inch thick, 1/2 cup white wine vinegar, 4 onions, thinly sliced, and 1/2 cup olive oil. To prepare, place a steamer basket in a large pot. Fill with enough salted water to come below the basket. Bring to a boil. Place the potatoes in the basket, reduce the heat to medium. Cover and cook gently, occasionally, until tender, 10 to 15 minutes. Meanwhile, mix the vinegar and vegetables in a large bowl. Season with salt and pepper. When the potatoes are cooked, transfer them to a bowl with the vinegar mixture. Toss to combine. Cool, tossing occasionally. When the potato mixture is cool, mix in the oil. Season the seasonal potato salad with salt and pepper.
