This traditional sauce is the perfect companion for our Brined and Roasted Turkey 101. The recipe comes from Martha Stewart Living, November 2005, and yields about 3 cups. The ingredients include 3 cups of fresh cranberries (12 ounces), 1 cup of sugar, 1 tablespoon of chopped peeled fresh ginger, and 1 navel orange, with the peel and pith removed and the flesh cut into segments. To make the sauce, mix the cranberries, sugar, and ginger in a medium saucepan. Cook over medium-high heat, stirring occasionally, until the sugar dissolves and the cranberries begin to pop, about 7 minutes. Add 1 cup of water and simmer slowly for about 4 minutes. Remove from heat and stir until the sauce turns orange. Let it cool.
