“You can use any combination of farmers market and tropical fruit for this wonderful late breakfast. Bonus: You can prepare all the accompaniments in advance: boiled peaches rich in ricotta flavor with vanilla, guava syrup, and sweet digestive biscuits. Source: Martha Stewart Living, July/August 2018. Total time: 45 minutes. Preparation time: 30 minutes. Serves 8 to 10. Ingredients: Boiled peaches: 4 ripe but firm peaches or nectarines (about 1 pound), sliced and peeled, 3 tablespoons of sugar, 2 tablespoons of fresh lemon juice. Whipped ricotta: 1 pint of ricotta cheese, 1/2 teaspoon of pure vanilla extract, 1 tablespoon of pure guava syrup. Fruit platter: 1/2 cantaloupe, sliced into thick pieces, 1/2 pineapple, halved and sliced into thick pieces, 1/2 baby watermelon, sliced into thick pieces, 1 cup of green or muscat grapes, 3 kiwifruits, peeled and sliced, 8 fresh figs, halved, 2 cups of mixed berries, such as blueberries, raspberries, and blackberries, digestive biscuits, to serve. Directions: 1. Boiled peaches: Combine peaches, sugar, lemon juice, and 2 tablespoons of water in a small saucepan over medium heat. Bring the mixture to a boil over low heat, then reduce the heat to low, cover, and cook gently, stirring occasionally, until the fruit is tender, 5 to 10 minutes, depending on ripeness. (Makes 2 cups.) 3. Fruit platter: Arrange all the fresh fruit on a platter. Serve with boiled peaches, whipped ricotta, and digestive biscuits.”
