This recipe for crispy and bright potato salad is perfect with grilled meats such as pork, beef or chicken, whether its warm or straight out of the fridge. The ingredients include green beans, small potatoes, olive oil, lemon juice, whole grain mustard, chopped thyme leaves, thin slices of red onion, and coarse salt. The green beans are cooked in salted water until tender and bright green, then transferred to a bowl of ice water. The potatoes are added to the same pot of salted water and cooked until tender, then drained and halved. The dressing is made with olive oil, lemon juice, mustard, and thyme, then tossed with the potatoes, green beans, and red onion. Season with salt and serve.
