Source: Mad Hungry, October 2010 6 servings Ingredients 1/2 cup bulgur wheat 2 tomatoes, diced (1/2 cup) 3 green onions (both white and green parts), thinly sliced (1 cup) 2 to 3 cups chopped fresh curly parsley 1 cucumber, peeled and chopped (1 cup) 1/2 cup chopped fresh mint leaves 1/4 teaspoon freshly grated lemon zest 2 tablespoons fresh lemon juice 1/3 cup extra-virgin olive oil 1/4 teaspoon coarse salt, or more to taste Directions 1. Rinse the bulgur wheat in cold running water and soak in a bowl of cold water for 20 minutes. Drain and place in a large bowl. 2. Add the tomatoes, green onions, parsley, cucumber, and mint. Toss together. 3. Whisk the lemon zest, juice, olive oil, and salt together. Drizzle over the salad and toss to combine completely.
