This recipe for frittata is incredibly rich and delicious, and can be low in fat and very nutritious. With 4 servings, the ingredients include 9 egg whites, 3 eggs, 1 cup of cleaned and chopped chanterelle mushrooms, kosher salt and freshly ground pepper, 1 teaspoon of extra virgin olive oil or non-stick cooking spray, 1/4 cup of small fresh marjoram leaves, and 2 cups of trimmed, washed, and dried mixed vegetables. To prepare, preheat the oven to 375 degrees, beat the egg whites until foamy, beat the eggs until lemon-colored, fold in the egg whites, add the mushrooms and season with salt and pepper, heat a non-stick skillet with olive oil or cooking spray, add the egg mixture and sprinkle marjoram leaves on top, cook for 4 minutes or until the edges are set, transfer to the oven and bake for 4-6 minutes until golden, slice into wedges and serve over mixed greens.
