These colorful peppers are excellent for sandwiches, pasta dishes, or as part of an antipasto platter. The recipe can easily be doubled and the peppers can be stored in an airtight container in the refrigerator for up to one week. Source: Martha Stewart Living, April 2003. This recipe takes 20 minutes to make, with 10 minutes of prep time and serves 4. The ingredients include 4 peppers (red, yellow, or orange), 1/4 cup extra-virgin olive oil, 1 tablespoon white wine vinegar, 2 garlic cloves (halved lengthwise), a few sprigs of basil, coarse salt, and freshly ground black pepper. The instructions are to heat the broiler, cut the peppers in half, remove the stems, ribs, and seeds, place them cut side down on a curved baking sheet, broil until the skins are charred, steam the peppers in a bowl covered with plastic wrap until cool, rub off the skins with a paper towel, cut the peppers into strips, and toss them with the collected juices, oil, vinegar, garlic, basil, salt, and pepper. Serve warm or at room temperature.
