These delicate, crunchy fries are the perfect French bistro-inspired accompaniment to our Hanger Steak with Shallots. The recipe is from Martha Stewart Living, March 2006. It takes 30 minutes in total, with 10 minutes of preparation time, and serves 4. To make the fries, you will need vegetable oil cooking spray, 2 medium russet potatoes (about 1 1/2 pounds), cut into matchsticks, 3 tablespoons extra-virgin olive oil, kosher salt, and freshly ground pepper. Preheat the oven to 425 degrees Fahrenheit and coat 2 baking sheets with cooking spray. Toss the potatoes, oil, and 1 teaspoon of salt in a bowl, then arrange them in a single layer on the prepared baking sheets. Bake for 18 to 20 minutes, turning the potatoes with a metal spatula 2 or 3 times and rotating the sheets halfway through, until the fries are crisp and the edges are golden brown. Transfer the fries to a large piece of parchment paper, let cool for 5 minutes, and season with salt and pepper. You can use a mandolin to quickly and easily slice the potatoes. You can also prepare the matchsticks up to 4 hours in advance by placing them in a bowl of cold water in the refrigerator to prevent browning, then gently patting them dry with paper towels before using.
