These Halloween cookies are too good to pass up. You can also use pumpkin instructions below for our Dulce de Leche Bat Cookies. Source: Martha Stewart Living, October 2007 Makes 34 Yield Ingredients 1 1/2 cups flour, plus more for dusting 1/4 tsp baking powder 3/4 tsp salt 4 tbsp unsalted butter, room temperature 1/4 cup packed dark brown sugar 1 large egg 2 tbsp unsulphured molasses 1/4 cup honey 1 tsp pure vanilla extract 1/4 cup plus 2 tbsp dulce de leche or apricot jam Instructions 1. Whisk together flour, baking powder, and salt. Beat butter and sugar with a mixer on medium speed until pale and fluffy. Beat in egg, molasses, honey, and vanilla. Reduce speed. Add flour mixture, and beat until just combined. Shape into disk, wrap in plastic, and refrigerate for 1 hour. 2. Preheat oven to 350 degrees. On a floured parchment, roll out dough to 1/8 inch thick. Cut out 68 rounds with a 2-inch cutter. Transfer to parchment-lined baking sheets. 3. For bat design: Use a pastry bag fitted with a small round tip to pipe dulce de leche into a triangle, point side up, in the center of each cookie. Use a crescent cutter to make wings on either side of triangle. Chill for 30 minutes. For pumpkin design: Use a linzer cutter to cut out two triangles, point side up, in the center of each cookie for eyes. Use a crescent cutter to make a smile below. Chill for 30 minutes. 4. Bake for 7 minutes. Remove sheets from oven, and tap them firmly on counter. Bake until lightly browned, about 7 minutes more. Let cool completely. Fill each cookie with 1 tsp dulce de leche or jam, and sandwich with a cutout cookie. Cooks Notes Making these cookies requires the use of a pastry bag.
