These gifts are simple but impressive and almost too beautiful to eat – but too tempting not to. Choose the same shape for the container in which you can give these cookies, as it can be reused long after the cookies are gone. This recipe makes about 3 dozen cookies and takes approximately 6 hours and 30 minutes to prepare and 1 hour and 20 minutes to cook.
Ingredients:
Cookies
– 2 sticks unsalted butter, at room temperature
– 1 cup granulated sugar
– 1 large egg, at room temperature
– 2 teaspoons pure vanilla extract
– 1 teaspoon coarse salt
– 2 1/2 cups all-purpose flour, plus more for dusting
Royal Icing
– 1 pound confectioners sugar (3 3/4 cups)
– 1/4 cup meringue powder
– Soft gel-paste food coloring, such as AmeriColor, Peach and Dusty Rose; and edible silver leaf, for decorating (optional, both available at globalsugarart.com)
Instructions:
1. Cookies: Line 2 large baking sheets with parchment. Beat butter and granulated sugar with a mixer on medium-high speed in a large bowl until pale and fluffy, about 1 minute. Beat in egg, vanilla, and salt on medium speed until combined. Reduce speed to low, and gradually add flour, beating until just incorporated. Divide dough into 2 equal portions. Shape each into a disk; wrap each in plastic, and refrigerate until firm, at least 2 hours and up to 1 day.
2. Preheat oven to 325 degrees. Roll out 1 disk of dough on a lightly floured piece of parchment to a scant 1/4 inch thick. Transfer dough on parchment to a baking sheet, and chill until firm, about 30 minutes or up to 1 hour. Repeat with remaining disk.
3. Cut out cookies with a 2 1/2-inch hexagonal cutter; transfer to prepared baking sheets, spacing about 1 inch apart. Chill until firm, about 15 minutes. Gather scraps, and repeat rolling, chilling, and cutting to make more shapes.
4. Bake cookies, rotating sheets halfway through, until set and golden on bottoms, 12 to 15 minutes. Let cool completely on sheets on wire racks.
