This delicious recipe for orecchiette with broccoli rabe is courtesy of Donatella Arpaia. Source: Martha Stewart Show, April 2007. The recipe serves 4 and includes Italian sausage, fresh semolina orecchiette, broccoli, garlic, red pepper flakes, extra-virgin olive oil, coarse salt, freshly ground black pepper, and grated Parmesan cheese. The sausage is browned in a large skillet, then set aside. Broccoli is blanched in boiling salted water for 1 minute, drained, and set aside. The pasta is cooked in boiling salted water until al dente, drained, and set aside. The reserved skillet is heated with olive oil, broccoli rabe, garlic, and red pepper flakes, then the sausage is added back in. The pasta is added to the skillet and tossed with the sausage and broccoli rabe mixture, adding reserved cooking liquid if needed. The dish is topped with grated Parmesan cheese and served immediately.
