This recipe is in Danish and it describes how to make a classic side dish of creamed spinach that can be reheated for your weekend dinner. The recipe calls for 1 pound of washed and trimmed spinach, seasoned with salt and pepper, cooked in a large pot for 4-5 minutes until wilted, then drained and cooled. In a separate pot, butter is melted and a chopped shallot or onion is added and cooked for 3-5 minutes until soft. Flour is then added and cooked for 1 minute before adding 3/4 to 1 cup of milk and stirring until thickened. The spinach is added to the pot and seasoned with salt and pepper before serving.
