These mushrooms would be a great addition to an antipasto platter. For the most flavor, let them marinate overnight. Source: Everyday Food, April 2004. This recipe takes 1 hour and 20 minutes and serves 4. Ingredients include water, olive oil, white wine vinegar, garlic, thyme, salt, pepper, and button mushrooms. To prepare, bring the water, olive oil, vinegar, garlic, thyme, salt, and pepper to a boil in a medium saucepan. Add the mushrooms and stir to coat. Cover and cook over low heat until the mushrooms are tender and have released their liquid, 5 to 8 minutes. Remove the mushrooms with a slotted spoon to a bowl and reserve. Bring the liquid to a boil and cook until reduced to 1/4 cup, 3 to 4 minutes. Pour over the mushrooms. Cool completely and serve.
