This recipe for a simple chocolate cake is a favorite of Lucinda Scala Quinns oldest son, Calder. Overflowing with whipped cream and thinly sliced strawberries, it makes for an easy and delicious dessert. To make one two-layer cake, you will need two Busy-Day Dump Cakes baked in two 8-inch round cake pans, two pints of heavy whipping cream, 1/4 cup of confectioners sugar, 1 teaspoon of vanilla extract, and 1 quart of fresh strawberries, washed, trimmed, and thinly sliced. To assemble the cake, first bake and cool the cakes completely. Then, whip the cream until soft peaks form, adding the sugar and vanilla and continuing to whip until stiff peaks form. Be careful not to overmix! Next, slice the top off of one cake round to create a flat surface. Spread a thick layer of whipped cream over the bottom cake round, then top with a layer of half of the sliced strawberries. Add the second cake round and spread with another thick layer of whipped cream. Top with the remaining strawberries. Slice and serve with extra whipped cream and berries on the side.
