Source: Everyday Food, November 2012. 20 min 10 min 4 Total time Prep Doses Ingredients Salt and black pepper 3/4 pound spaghetti or spaghetti 4 ounces fresh goat cheese 10 ounces baby spinach (10 cups) 3 cups fresh parsley, chopped 2 cups fresh cilantro, chopped 1 tablespoon grated lemon juice plus 1 tablespoon juice 1/2 cup chopped toasted walnuts instructions 1. In a large pot of boiling salted water, cook pasta according to package instructions. Reserve 2 cups of pasta water, then drain. 2. In a pot, whisk together goat cheese and 1 cup of liquid olive oil over medium heat. Add pasta, spinach, parsley, cilantro, lemon zest and juice, and more pasta if needed to create a light sauce that coats the pasta; season with salt and black pepper. Sprinkle with walnuts and serve. Chefs notes This dish has a double dose of lemon: The juice adds tanginess, while the zest contributes a softer, more floral aroma.
