    Tofu and I have come a long way – it wasnt my moms radar when I was growing up. I first tried it at a hippie vegetarian place during college, and although I wanted to love this cheap, plant-based protein, I just couldnt get past the taste or lack thereof. Fortunately, most of my tofu complaints can be solved by choosing the right type and pairing it with the best cooking technique. I have to thank my colleague Lauryn Tyrell (and her macrobiotic childhood) for creating this simple, delicious bowl for a night that will get you psyched for baked tofu.     One of the reasons I love this recipe is that it uses my favorite type of tofu: silken. It has a creamy, smooth consistency and doesnt need to be pressed. All you have to do is drain the liquid from the package – how easy is that?! Since tofu is stored in water, its best to marinate it mostly in water. (Remember how water and oil dont mix? You want the marinade and tofu to be friends.) For this recipe, the tofu is gently heated in a tasty broth of fresh ginger, water, sesame oil, and a little salt. The end result is like a spicy, better pudding because it contains all the essential amino acids. To serve, simply place large pieces in each bowl.

    Cooked noodles with cream add juice and fiber and are a great choice for people who want to avoid sticking. For a tip: after draining the cooked soba noodles, rinse them well under cold water. This prevents them from sticking together in a huge pile – and this instruction is rarely found on the back of the package. Also, be prepared to dress them immediately into the bowl, which will ensure even flavor and help keep the strands separate and light.

    Steamed asparagus adds a nice touch of green and nutrients, but you can also use baby bok choy or sugar snap peas or a combination. The dressing is made up of ingredients you probably have at home: fresh lime juice, soy sauce (or tamari), chili sauce, honey (or light brown sugar), and toasted sesame oil. A quick garnish of toasted sesame seeds and fresh cilantro adds a fresh touch and sets this bowl apart from heavy takeout.
