This omelette made with egg yolk, spinach, and low-fat cottage cheese is a healthy start to the day. The recipe includes 3 large egg whites, coarse salt and ground pepper, 1 teaspoon of olive oil, 1 cup of packaged baby spinach, 1/4 cup of low-fat (1%) cottage cheese, and 2 tablespoons of grated Parmesan cheese. To make the omelette, whisk together the egg whites, water, salt, and pepper in a medium bowl. In a medium skillet, heat the olive oil over medium-high heat. Add the spinach and season with salt and pepper; cook until wilted and tender, about 1 minute. Add the egg whites; cook until almost set, using a flexible heat-resistant spatula to pull the sides of the omelette towards the center as the raw egg whites run underneath, 1 to 2 minutes. Dollop the cottage cheese on top of the omelette, sprinkle with Parmesan cheese, and season with salt and pepper. Carefully slide the omelette onto a serving plate, folding it over slightly by tilting the skillet.
