Source: Daily Food, April 2007. 15 min 10 min 4 Total time Prep Doses Ingredients 2 tablespoons olive oil 4 cloves garlic, peeled and crushed 3 to 4 bunches (about 1 kilogram total) flat leaf spinach, trimmed and cleaned, with a little water still sticking 1 to 2 tablespoons fresh lemon juice Coarse salt and ground pepper instructions 1. In a large skillet, heat the oil over medium heat. Add garlic; cook, stirring, until fragrant and starting to brown, about 1 minute. Using a slotted spoon, remove the garlic and discard. 2. Increase the heat. Gradually add the spinach, waiting for one batch to wilt before adding the next. Cook, tossing, until tender, 3 to 4 minutes. 3. Drain the liquid from the skillet; add lemon juice, salt and black pepper to taste. Chefs notes Spinach loses about three-quarters of its volume when cooked, so be aware of the amount required in recipes, even if it looks like a lot.
