These cinnamon-filled, cinnamon rolls are the perfect way to use up leftover sweets to make Danish pastries. Marta made this recipe for Martha Bakes episode 502.
Ingredients:
1 cup sugar
1/2 teaspoon cinnamon
All-purpose flour for dusting
Danish pastry dough
1 large egg, lightly beaten
Sweetened whipped cream
Granulated sugar for sprinkling
Instructions:
1. Combine the sugar and cinnamon in a small bowl and stir to combine. Set aside.
2. On a lightly floured work surface, roll out the dough into a rectangle about 1/8 inch thick. Brush the surface with the beaten egg. Sprinkle the cinnamon sugar mixture evenly over the surface to cover. Any remaining cinnamon sugar can be saved for another use. Fold the dough in half lengthwise to enclose the cinnamon sugar. Trim the edges, discarding the scraps. Cut the dough into strips about 3/4 inch wide. Twist each strip and roll it into a spiral. Let rest in a warm place until the dough has doubled in bulk, about 45 minutes.
3. Preheat the oven to 375 degrees F. Fill the center of each spiral with a small dollop of apricot jam. Brush the dough with the remaining egg. Bake, rotating the sheets halfway through, until the pastries are evenly browned, 20 to 25 minutes. Transfer to a wire rack to cool. Serve at room temperature. The pastries are best consumed on the same day they are made.
