This clear breakfast is packed with vegetables, so you can start your day off right. The recipe calls for 2 teaspoons of olive oil, 1 cup of grapes or cherry tomatoes, 1 spinach, stems removed, salt and pepper, and 2 large eggs. In a medium non-stick pan, heat 1 1/2 teaspoons of oil over medium heat. Add the tomatoes and cook until softened, about 3 minutes. Add the spinach and cook until wilted, about 2 minutes; season with salt and pepper. Transfer to a bowl, wipe the pan clean, and add the remaining 1/2 teaspoon of oil. Add the eggs to the pan and cook until the whites are set but the yolks are still runny, 2 to 3 minutes. Season with salt and pepper and serve over the vegetables.
