This delicious cake recipe was adapted from “Martha Stewarts Baking Handbook”. Source: Martha Stewart Show, Episode 4001. Makes a 9-inch layer cake. Ingredients: 24 ounces high-quality semisweet chocolate, finely chopped, 1/2 cup plus 1 tablespoon Dutch-process cocoa powder, 1/2 cup plus 1 tablespoon boiling water, 3 sticks (1 1/2 cups) unsalted butter, room temperature, 1/2 cup granulated sugar, pinch of salt, Yellow butter cake, Colored sprinkles (optional). Instructions: 1. Place the chocolate in a heatproof bowl set over (but not touching) simmering water. Turn off the heat; stir occasionally until the chocolate is completely melted, about 15 minutes. Adjust the bowl on the counter and let the chocolate cool to room temperature for 25 to 30 minutes. Meanwhile, combine the cocoa powder and boiling water in a small bowl; stir until the cocoa dissolves. 2. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter, granulated sugar, and salt on medium-high speed until light and fluffy, 3 to 4 minutes. Add the melted chocolate; beat on low speed until combined, 1 to 2 minutes, scraping down the sides of the bowl as necessary. Beat in the cocoa mixture. 3. Using a serrated knife, trim the tops of the cakes to make level; brush off any loose crumbs. Place four strips of parchment paper around the perimeter of a serving plate or lazy Susan. Place the first layer on the plate and spread with 3/4 cup of the frosting. Place the second layer on top, bottom side up, and spread with another 3/4 cup of the frosting. Repeat with the third layer. Place the remaining layer on top, bottom side up. Insert a dowel into the center of the cake if necessary. Spread the entire cake with the remaining frosting. Decorate with sprinkles if desired.
