These sweet, full mussels are prepared in a tomato sauce with garlic, red pepper flakes, and wine; Spanish chorizo adds extra warmth. Source: Martha Stewart Living, November 2006. This recipe takes 40 minutes, with 10 minutes of prep time, and serves 4. Ingredients include 3 tablespoons of olive oil, 1 large shallot, 2 cloves of garlic, 1/4 teaspoon of crushed red pepper flakes, 2 cups of dry white wine, 3 cups of canned crushed tomatoes with juice, 4 ounces of dried, hot chorizo, sliced diagonally into 1/4-inch pieces, 1 teaspoon of coarse salt, freshly ground pepper, 2 pounds of mussels, scrubbed and debearded, and 1/3 cup of coarsely chopped flat-leaf parsley. Instructions include heating the oil in a large, heavy pot over medium heat, adding the shallot and cooking until soft, about 3 minutes, adding garlic and red pepper flakes and cooking for 3 more minutes, adding wine and bringing to a boil, adding tomatoes and chorizo, reducing heat and simmering for 15 minutes, seasoning with salt and pepper, adding mussels, covering and cooking until they open, about 10 minutes, and adding parsley and discarding any unopened mussels. Serve immediately.
