This delicious recipe for seafood is from “Spain: Culinary Road Trip”, featuring Mario Batali and Gwyneth Paltrow. Source: The Martha Stewart Show, December 2008. 8 servings. Ingredients: 1/4 cup olive oil, 1 pound fideos or angel hair pasta, broken into 1-inch pieces, 1 large onion, finely chopped, 2 cloves garlic, finely chopped, 1 teaspoon hot pimenton (Spanish paprika), 1 can (28 ounces) whole peeled tomatoes, 6 cups Mario Batali and Gwyneth Paltrows fish stock, 1 cup dry white wine, 1 dried bay leaf, large pinch saffron threads, 1 liter mussels, cleaned, 1 pound medium shrimp, in the shell, 1 pound clams, scrubbed. Instructions: 1. In a large Dutch oven, heat the oil over medium heat. Add the fideos and cook, stirring frequently, until toasted, about 10 minutes. Using a slotted spoon, transfer the fideos to a bowl and set aside. 2. Add the onion, garlic, and pimenton to the pot and cook until the onion begins to soften, about 5 minutes. Using your hands, crush the tomatoes and add them and their juices to the pot. Increase the heat to high and cook, stirring frequently, until the tomatoes break down and the sauce thickens, 15 to 20 minutes. 3. Meanwhile, place the stock, wine, bay leaf, and saffron in another large Dutch oven and heat. Add the mussels, shrimp, and clams and cook until all the mussels and clams have opened and the shrimp are opaque, 4 to 6 minutes. Transfer the mussels, shrimp, and clams to a large bowl and set aside. 4. Add the shellfish cooking liquid and the tomato sauce to the fideos. Cook, stirring frequently, until the fideos have absorbed much of the liquid and are tender, 10 to 15 minutes. Add the mussels, shrimp, and clams and let them warm through. Serve immediately.
