This recipe for DArtagnan Spanish-style sausage is highly recommended. It is made from traditional pork and has a great taste that can be used in a variety of ways. If you dont have a fondue pot, you can serve queso fundido in a cooked skillet; return it to the stove and heat as needed. This recipe is adapted from Martha Stewarts appetizer. The ingredients include olive oil, Spanish (pickled) sausage, chopped sweet onions, green chilies, coarse salt, tequila, Monterey Jack cheese, and corn chips. The cooking time is 30 minutes, and the recipe serves 8. To prepare, heat the oil in a large heavy skillet, add the sausage, and cook until browned. Remove the sausage and add the onions and chilies to the skillet. Season with salt and cook until the onions are translucent. Add the tequila and cook until most of the alcohol has evaporated. Reduce the heat and gradually stir in the cheese until melted. Serve immediately with the sausage and corn chips.
