This delicious and easy-to-make recipe comes from Pam Glynn, the winner of the “Mad Hungry” TV Weeknight Dinner Challenge. Source: Mad Hungry, May 2011. The ingredients include olive oil, garlic, paprika, cumin, red pepper, fresh coriander or parsley, salt, black pepper, a whole chicken, garbanzo or white beans, and cherry or grape tomatoes. To prepare, mix the marinade and combine it with the chicken, beans, and tomatoes in a zip-top bag or container. Let it marinate for a few hours or overnight, then dump everything into a large baking dish and bake at 450 degrees for 20-30 minutes. Boneless chicken breasts can also be used in this recipe, with a shorter cooking time of about 20 minutes.
