This chocolate cake with vanilla buttercream frosting is a delicious dessert that every taste tester will love. The recipe, from the Martha Stewart Show, yields two 8-inch layers. To make the cake, youll need cocoa powder, strong coffee, milk, cake flour, baking powder, salt, unsalted butter, sugar, vanilla extract, and eggs. Preheat the oven to 350 degrees Fahrenheit and butter two round cake pans. Line with parchment paper and dust with cocoa powder. In a medium bowl, sift the cocoa powder and stir in the coffee and milk. Set aside to cool. In another medium bowl, sift the flour, baking powder, and salt. Set aside. In a large bowl, beat the butter until light and fluffy. Gradually add the sugar and vanilla. Add the eggs one at a time, beating well after each addition. Pour in the cocoa mixture and mix until fully incorporated. Add the flour mixture and stir until just combined. Divide the batter evenly between the prepared pans and bake for 20 minutes. Rotate the pans and bake for an additional 20 to 25 minutes, or until a cake tester comes out clean. Let the cakes cool in the pans for 15 minutes, then carefully remove them from the pans and let them cool completely on a wire rack. To assemble the cake, level the top of each layer with a serrated knife. Place four strips of parchment paper around the perimeter of a lazy Susan. Place one layer on the lazy Susan and spread 3/4 cup of buttercream on top. Place the remaining layer on top, bottom side up. Spread a thin layer of buttercream on the top and sides of the cake to create a crumb coat. Chill for at least 30 minutes to set the buttercream. Apply the final layer of buttercream and smooth the sides with a bench scraper or large offset spatula held at a 45-degree angle while turning the lazy Susan. Enjoy!
