These spicy chicken pies with our barbecue chicken filling are a must-try. The recipe is from Everyday Food, July/August 2006. The preparation time is 20 minutes and the total time is 20 minutes. The recipe makes 4 servings. Ingredients include 3 ears of corn, kernels removed, 1/3 cup milk, 1 large egg, 1 teaspoon sugar, 1/2 teaspoon baking powder, coarse salt and ground pepper, 1/4 cup cornmeal, 1/4 cup flour, and 2 tablespoons vegetable oil. Sour cream is optional for serving. To prepare, preheat the oven to 200 degrees Celsius. Remove the kernels from the corn and mix with milk, egg, sugar, baking powder, salt, and pepper. Fold in cornmeal and flour. Heat oil in a large skillet and cook the pies until golden brown. Transfer to a baking sheet and bake for 30 minutes. Serve with sour cream if desired.
