This recipe is created with flexibility in mind and is a great way to use up leftover ingredients. The source is Body + Soul, January/February 2010. Ingredients include chopped onions, olive oil, garlic, red pepper flakes, 2 cups of cubed hard vegetables (winter squash, parsnips, carrots, sweet potatoes, potatoes), vegetable broth, Parmesan cheese, a small sprig of rosemary or thyme, salt and black pepper, 1 cup of cubed vegetables (zucchini, green beans, broccoli), and a handful of shredded vegetables. Instructions include sautéing the onions in olive oil with garlic and red pepper flakes, adding the cubed hard vegetables and covering with broth and Parmesan cheese, seasoning with salt and pepper, simmering until tender, stirring in the cubed and shredded vegetables, and serving. The chefs notes suggest adjusting the amounts of ingredients based on what you have, the flavors you like, and the number of servings you need.
